Bluefish Recipes

 

Grilled Bluefish
4 servings

4 pounds bluefish fillets
1 cup orange juice
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
¼ cup olive oil
1 tablespoon of dry white wine
kosher salt- to taste
black pepper- to taste
¼ cup citrus flavored seafood rub

Directions:

Place the fish fillets into a large bowl. Pour in the orange juice, lime juice, lemon juice, olive oil and white wine. Season with salt, pepper and seafood rub. Stir to blend and coat fish. Leave the squeezed lemon and lime halves in the bowl too. Marinate for at least 30 minutes.
Preheat a grill for high heat. When the grill is hot, oil the grate.
Place fish fillets on the grill, and discard the marinade. Cook for 4 minutes on each side, or until fish flakes with a fork. Transfer to a serving platter, and remove the dark blue part of the fish before serving.

 

Cheesy Oven-Fried Bluefish
Serves 4-5

2 lbs bluefish fillets
1 cup milk
I cup dry bread crumbs
¼ cup butter or margarine
1/2 teaspoon oregano
1/2 teaspoon garlic powder
½ tablespoon salt
shredded cheddar cheese

Directions:
Preheat oven to 500 degrees. Add oregano, garlic powder and salt to crumbs and mix well. Dip fillets in milk and roll in crumb mixture. Place in a well-greased pan, pad butter on top of each fillet. Bake for 10 minutes or until fish flakes easily with a fork. Top fillets with shredded cheese (enough to cover each fillet) 1 minute before the fish is done so it melts over fillets. Serves 4-5.

 

Outer Banks Grilled Blues
Serves 2

4 snapper (small) blues, dressed
4 tablespoons lemon juice
4 tablespoons butter
1 teaspoon sage
½ teaspoon garlic powder

Directions:
Melt butter and stir in all other ingredients except fish. Pour over fish 10 minutes before cooking. Grill fish about 6 minutes each side. Good served over steaming wild rice with a lemon slice for presentation.

 

Broiled Bluefish

1 ½ lbs bluefish fillets
4 tablespoons mayonnaise
salt and pepper
paprika

Directions:
Preheat broiler. Coat both sides of fillets with mayonnaise and sprinkle with paprika, salt and pepper. Place on greased broiler pan 5 inches from heat. Broil 8 to 10 minutes.
