Pollock Recipes

 

Baked Pollock

Serves: 4-6

 

4 -6 fish fillets

1/3 cup sour cream

1/4 cup grated parmesan cheese

2 tablespoons melted butter

salt and pepper, to taste

 

Directions:

Preheat oven to 350 degrees.

Cover half sheet pan with foil and spray with non stick cooking spray.

Mix all ingredients except fish.

Spread mixture on one side of each fillet.

Bake uncovered for 15 to 25 minutes (depending on the thickness of you fish) till fish is done.

Brown slightly with broiler if desired.

 

Lemon-Dill Pollock

Serves: 4

 

1/3 cup minced fresh dill

1/4 cup fresh lemon juice

1 tablespoon olive oil

4 teaspoons Dijon mustard

1/4 teaspoon salt

1/4 teaspoon sugar

1/4 teaspoon black pepper

1 garlic clove, minced

4 (6-ounce) pollock or other firm white fish fillets

Cooking spray

 

Directions:

Combine all ingredients except cooking spray in a large zip-top plastic bag; seal and marinate in refrigerator 20 minutes. Remove fish from bag; discard marinade.

 

Prepare grill or broiler.

 

Place fish on a grill rack or broiler pan coated with cooking spray. Cook for 4 minutes on each side or until fish flakes easily when tested with a fork.

 

 

Pollock Fillets Almondine

Serves: 6        

2 lb. pollock or other fish fillets

1/4 c. all purpose flour

1 tsp. seasoned salt

1 tsp. paprika

1/4 c. butter

1/2 c. sliced almonds

2 tbsp. lemon juice

5 drops hot pepper sauce

1 tbsp. chopped parsley

 

Directions:

Cut fish into 6 portions. Combine flour, salt, and paprika. Roll fish in mixture and place in single layer, skin side down, in well greased baking pan. Drizzle 2 tablespoons of melted butter over the fish. Broil 10-15 minutes or until fish flakes easily.

Meanwhile, saute almonds in remaining butter until golden brown. Remove from heat. Add lemon juice, hot pepper sauce and parsley. Pour over fish and serve at once.

 

 

Parmesan crusted Pollock

Serves: 2

 

Pollock (2 filets, about 4 oz each)

2Tbls Grated Parmesan

2Tbls Seasoned Bread Crumbs

2Tbls Light Miracle Whip

 

Directions:

Preheat oven to 425. Line baking sheet with foil sprayed with non-stick cooking spray. Pat filets dry, spread both sides with miracle whip. In bowl mix parmesan and bread crumbs together. Sprinkle cheese/crumb mixture over fish, bake for 15-20 minutes until golden brown. (I usually am working on a side dish and a salad, so I keep my eye on the oven.)
